"Carrots are full of antioxidants, as are plump olives, a star of the healthy Mediterranean diet. If slicing carrots lengthwise seems too laborious or complicated, they can be shredded or thinly sliced into coins. Meaty green olives would be great in this salad, but any olives, including oil-dried black ones, will give the salad a nice salted and savory flavor."
