"Carrots are full of antioxidants, as are plump olives, a star of the healthy Mediterranean diet. If slicing carrots lengthwise seems too laborious or complicated, they can be shredded or thinly sliced ​​into coins. Meaty green olives would be great in this salad, but any olives, including oil-dried black ones, will give the salad a nice salted and savory flavor."
